  1. Preheat the oven to 400°F (200°C).
  2. Mix together the cream and cream cheese along with the pesto and a bit of lemon juice. Give it a good seasoning with salt and pepper to suit your taste buds.
  3. In a large skillet over medium-high heat, melt the butter. Next, add the chicken pieces and season them generously with salt and pepper. Cook the chicken until it achieves a lovely golden brown, ensuring it’s thoroughly cooked through.
  4. Place the chicken in a greased 9 x 13″ (23 x 33 cm) baking dish, and pour in the cream mixture.
  5. Place a generous amount of leek, tomato slices, and cauliflower on top of the chicken.
  6. After topping with cheese, place the dish in the center of the oven and bake for a minimum of 30 minutes, or until the chicken is thoroughly cooked. If there’s a chance the casserole might burn, shield it with aluminum foil, reduce the heat, and allow it to cook for a bit longer.
